2022 Eliza's Red Wine
Eliza Yount was a colorful character in Napa Valley wine history–widow to the founder of nearby Yountville and one-time owner of a quiet corner of To Kalon Vineyard, along Walnut Lane, that is now home to our coveted planting of Cabernet Franc. Our aim with this wine, crafted from 54% Cabernet Franc and 46% Cabernet Sauvignon, is to showcase the layers of depth and complexity that Cabernet Franc can exhibit when the variety is grown in such rarified earth as To Kalon. Aromas of black licorice, black raspberry, rose hips, and cigar box give way to bright Bing cherry, cranberry, cocoa nibs, and cola. This wine leads the palate with pronounced Cabernet Franc aromatics and finishes with the powerful tannin and concentration of Cabernet Sauvignon.
2022 H.W.C. Cabernet Sauvignon
Named after H.W. Crabb, the visionary steward and student of To Kalon who gave the vineyard its name in the late 1800s, our H.W.C is sourced from one block of vines planted to a heritage clone of Cabernet Sauvignon that produces impossibly small clusters of tiny berries yielding wines with remarkable energy and concentration. Aromas of black currant, blackberry, and dark chocolate soar from the glass. Savory notes of cocoa and black olive evoke the forest floor terroir of To Kalon. The palate mirrors the dark and rustic nose, framed by cedar, with a rich and robust, tannin-laden finish. This is a powerful wine, yet it retains precision and focus.
2022 Highest Beauty Cabernet Sauvignon
Painstakingly crafted each vintage, Highest Beauty is our attempt to capture the finest expression of Cabernet Sauvignon and the purest representation of the legendary To Kalon Vineyard. Produced from 91% Cabernet Sauvignon and 9% Petit Verdot that is hand-selected from blocks throughout To Kalon Vineyard, the Highest Beauty exhibits classic Cabernet Sauvignon character with great richness and depth. Cherry, black raspberry, and bramble captivate the nose and are complemented by notes of chocolate shavings and cedar. Flavors of black licorice, tobacco, and cocoa nib are wrapped by subtle toasted spice.
